Ingredients

For the Donuts:

  • 1 cup ube puree (fresh or canned)

  • 1 cup all-purpose flour

  • ½ cup granulated sugar

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • ½ tsp vanilla extract

  • ½ cup milk (or milk alternative)

  • 1 large egg

  • 2 tbsp melted butter

For the Toppings (Optional):

  • Powdered sugar

  • Ube glaze (powdered sugar + ube extract)

  • Sprinkles

Instructions

  • Preheat Air Fryer: Preheat to 350°F (175°C) for 5 minutes.

  • Mix Dry Ingredients: Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.

  • Combine Wet Ingredients: Mix ube puree, milk, egg, melted butter, and vanilla extract in another bowl.

  • Combine Mixtures: Pour wet ingredients into dry ingredients and stir until just combined. Do not overmix.

  • Form Donuts: Grease a silicone donut mold or pan. Fill each section about ¾ full with batter.

  • Air Fry: Place mold in air fryer basket and cook 8–10 minutes. Check doneness with a toothpick.

  • Cool and Glaze: Remove donuts from mold and cool for a few minutes. Add powdered sugar, glaze, or sprinkles if desired.

  • Do not overmix the batter.

  • Add spices like cinnamon or nutmeg for extra flavor.

  • Store leftovers in an airtight container at room temperature up to 2 days, or refrigerate for longer freshness.
