Ingredients
For the Roll-Ups:

4 large flour tortillas

1 cup pumpkin puree

1 cup cream cheese, softened

1/2 cup powdered sugar

1 tsp pumpkin pie spice

Cooking spray or olive oil spray
For the Coating:

1/4 cup granulated sugar

1 tsp cinnamon
Instructions

Prepare filling: mix pumpkin puree, cream cheese, powdered sugar, pumpkin pie spice, and vanilla until smooth.

Lay a tortilla flat, spread pumpkin filling, leaving a small border. Roll tightly. Repeat with remaining tortillas.

Mix granulated sugar and cinnamon for coating.

Lightly spray air fryer basket. Roll each tortilla in cinnamon sugar and place seam-side down in the basket.

Air fry at 350°F (175°C) for 6–8 minutes, flipping halfway, until golden and crispy.
