Description

Celebrate fall with these crispy Air Fryer Pumpkin-Spice Roll-Ups! Soft, creamy pumpkin filling wrapped in a golden tortilla, coated with cinnamon sugar — perfect for cozy nights or festive gatherings.


Ingredients

For the Roll-Ups:

  • 4 large flour tortillas

  • 1 cup pumpkin puree

  • 1 cup cream cheese, softened

  • 1/2 cup powdered sugar

  • 1 tsp pumpkin pie spice

  • 1 tsp vanilla extract

  • Cooking spray or olive oil spray

For the Coating:

  • 1/4 cup granulated sugar

  • 1 tsp cinnamon


Instructions

  • Prepare filling: mix pumpkin puree, cream cheese, powdered sugar, pumpkin pie spice, and vanilla until smooth.

  • Lay a tortilla flat, spread pumpkin filling, leaving a small border. Roll tightly. Repeat with remaining tortillas.

  • Mix granulated sugar and cinnamon for coating.

  • Lightly spray air fryer basket. Roll each tortilla in cinnamon sugar and place seam-side down in the basket.

  • Air fry at 350°F (175°C) for 6–8 minutes, flipping halfway, until golden and crispy.

 

  • Cool slightly before serving. Optional: dust with powdered sugar.


Notes

  • Don’t overfill tortillas to prevent leaking.

  • Adjust cooking time depending on air fryer size.

  • Store leftovers in an airtight container in the fridge for up to 3 days; reheat in air fryer.
