Description

These crispy and golden air fryer pineapple fritters bring tropical sweetness with a lighter twist. Perfect as a snack, dessert, or even breakfast, they’re crunchy outside, soft inside, and bursting with juicy pineapple flavor.

Ingredients

For the Fritters

  • 1 cup fresh pineapple, finely chopped

  • 1/2 cup all-purpose flour

  • 1/4 cup cornstarch

  • 1/4 cup sugar (adjust to taste)

  • 1 teaspoon baking powder

  • 1/2 teaspoon vanilla extract

  • 1/2 teaspoon ground cinnamon (optional)

  • 1/4 teaspoon salt

  • 1/2 cup milk (or dairy-free alternative)

For Serving (Optional)

  • Powdered sugar, for dusting

  • Honey or maple syrup, for drizzling

  • Coconut flakes, for garnish

Instructions

  • Prepare the Pineapple – Chop pineapple into small, bite-sized pieces. For extra sweetness, marinate in 1 tbsp sugar for 10 minutes, then drain.

  • Mix Dry Ingredients – In a bowl, whisk flour, cornstarch, sugar, baking powder, cinnamon, and salt.

  • Add Wet Ingredients – Stir in milk and vanilla extract until just combined (do not overmix).

  • Fold in Pineapple – Gently mix pineapple pieces into the batter.

  • Preheat Air Fryer – Preheat to 375°F (190°C) for 5 minutes.

  • Shape Fritters – Drop spoonfuls of batter into the air fryer basket, leaving space between each.

  • Cook – Air fry for 10 minutes, flipping halfway through, until golden and crispy.

  • Serve – Let cool slightly. Dust with powdered sugar or drizzle with honey before serving.

Notes

  • Use fresh pineapple for the best flavor (canned works if well drained).

  • Adjust sugar based on pineapple’s natural sweetness.

  • Don’t overcrowd the basket—cook in batches if needed.

  • Store leftovers in the fridge up to 2 days; reheat in air fryer to crisp up.
