Description

Crispy on the outside and juicy on the inside, these tropical pineapple fritters are a healthier, air-fried twist on a classic treat. Perfect as a snack, dessert, or breakfast, they’re easy to make and full of flavor.

Ingredients

For the Fritters:

  • 1 cup fresh pineapple, finely chopped

  • ½ cup all-purpose flour

  • ¼ cup cornstarch

  • ¼ cup sugar (adjust to taste)

  • 1 tsp baking powder

  • ½ tsp vanilla extract

  • ½ tsp ground cinnamon (optional)

  • ¼ tsp salt

  • ½ cup milk (or dairy-free alternative)

For Serving (Optional):

  • Powdered sugar for dusting

  • Honey or maple syrup for drizzling

  • Coconut flakes for garnish

Instructions

  • Prepare Pineapple: Chop pineapple into small pieces. For extra sweetness, marinate with 1 tbsp sugar for 10 minutes, then drain.

  • Mix Dry Ingredients: In a bowl, combine flour, cornstarch, sugar, baking powder, cinnamon, and salt.

  • Add Wet Ingredients: Slowly add milk and vanilla to dry mix; stir until just combined. Some lumps are fine.

  • Fold in Pineapple: Gently mix pineapple into the batter.

  • Preheat Air Fryer: Preheat to 375°F (190°C) for 5 minutes.

  • Shape Fritters: Drop spoonfuls of batter into the air fryer basket with space between each fritter.

  • Air Fry: Cook for 10 minutes, flipping halfway, until golden and crispy.

  • Cool & Serve: Let fritters cool slightly, then dust with powdered sugar or drizzle with honey.

Notes

  • Use fresh pineapple for best flavor; drain canned pineapple well.

  • Adjust sugar based on pineapple sweetness.

  • Don’t overcrowd the basket; cook in batches if needed.

  • Store leftovers in the fridge up to 2 days; reheat in the air fryer.
