Ingredients
For the Apple Filling:
-
2 medium apples (Granny Smith or Honeycrisp)

1 tsp cinnamon
-
1 tbsp lemon juice
-
1 tbsp butter (optional)
For the Taquitos:

6 small flour or corn tortillas
-
Olive oil spray or melted butter for brushing
-
Powdered sugar (optional, for dusting)
-
Caramel sauce or vanilla ice cream (optional, for serving)
Instructions
-
Prepare the Apples: Peel, core, and chop apples. In a medium saucepan, cook apples with sugar, cinnamon, lemon juice, and butter over medium heat for 5-7 minutes until tender and syrupy. Let cool slightly.
-
Assemble Taquitos: Place 2 tbsp of apple mixture near the edge of each tortilla. Roll tightly, tucking in the sides.
-
Prep for Air Frying: Preheat air fryer to 375°F (190°C). Brush or spray taquitos with olive oil.
-
Air Fry: Place seam-side down in air fryer basket. Cook 8-10 minutes, turning halfway, until golden and crispy.
-
Serve: Dust with powdered sugar and serve warm with caramel sauce or vanilla ice cream.
Notes
-
Use firm apples that hold their shape, like Granny Smith or Honeycrisp.
-
Don’t overfill tortillas to prevent bursting.
-
Adjust sugar and cinnamon to taste; add nutmeg or ginger for variation.
-
Store leftovers in an airtight container in the fridge up to 3 days; reheat in the air fryer.
