Egg Rolls:

10 egg roll wrappers

Prepare the Apples: Toss diced apples with lemon juice, brown sugar, cinnamon, nutmeg (if using), and cornstarch. Let sit while assembling wrappers.

Assemble Egg Rolls: Lay one egg roll wrapper on a clean surface with a corner facing you. Place ~2 tbsp apple filling in the center.

Seal: Moisten wrapper edges with beaten egg. Fold the bottom corner over the filling, fold in the sides, and roll tightly. Repeat for remaining wrappers.
